As well as opening and operating a number of highly successful restaurants over the years (Currently operating are Ormeggio at The Spit, Chiosco by Ormeggio, and a'Mare) Alessandro has significant experience in hotels from his time as Executive Chef at the Park Hyatt Sydney.

 

He has consulted with several different restaurants around Sydney and internationally providing expert advice, including:

  • Menu design

  • Menu engineering

  • Financial control

  • Leading and inspiring teams

  • Venue design 

  • Food Safety and Compliance

  • Project Managing new venues - from concept to design to liaising with all builders and tradesmen, to operational set up, to logistics of opening.
